In the meantime -- while I'm composing the posts on Karabakh -- there is also all those yummy fruits and vegetables to take care of. I can a lot for the winter and this is the season.
Today, it was time to do something with the figs from the backyard. I'm not a jam-nut (although I do love my raspberry jam), so I decided to make a chutney. It turned out really yummy. I use German Gelierzucker which is the idot-proof way of making jams, jellies and chutneys. Gelierzucker is basically sugar with pectin and ascorbic acid. So, just add enough pectin and up your lemon juice a bit.
500g diced peached
200g diced figs
150 ml peach juice
100 ml vinegar (I use apple cider vinegar)
250g Gelierzucker (it's a special sugar with the jelly-making ingredient in it)
squirt or two of lemon juice
1 pinch of cloves
3 tsp chili
1 tsp red pepper flakes
1 pinch of cardamon
1 pinch of cumin
Throw in pot and boil for five minutes. Ready! Just divide in jars, let it sit for a week or two, and enjoy.
